2 1/2 pounds sausage- Italian (hot) or smoked (kielbasa)
2 1/2 pounds chicken meat, cooked and diced
2 pounds cooked shrimp (large)
2 cups yellow onions (about 5 medium)
2 cups celery (7 stalks)
2 cups bell peppers (3 peppers)
1 cup scallions
1/2 cup parsley flakes
1 tsp. garlic
2 tsp. salt
1 tsp. black pepper
1 tsp. thyme
1 tsp. oregano
3 bay leaves
2 1/2 tsp. hot sauce (cayenne) add more if desired
1 cup cooking oil
3 tbsp. flour
1 large can crushed tomatoes (28 ounce can)
1 large can tomato puree (28 ounce can)
3 cups chicken broth or 3 bouillon cubes and water

Directions:
Directions:
Place oil in pot and heat, add one inch pieces of sausage, remove from pot when cooked and put aside. In same oil add chicken, brown until flaky, drain, and add to sausage. Save the oil. Add flour to oil for rue, cook all the vegetables until soft, add broth, spices, tomatoes, let simmer for 30 minutes. Add meat and let simmer for 10 minutes. Serve on a bed of rice (Uncle Ben's rice works best)
