Kitchen Spray - Canola or Olive Oil
Seasoned salt, cajun seasoning, or spice mix

Preheat oven to 425º.

Wash as many potatoes as you will eat, optionally peel them (I do not). Cut them into wedges or large fry-sized pieces. Dry the potato pieces off, then lay in a large metal cookie sheet, cake pan, or jelly roll pan. It is best if they make only one layer on the pan. Spray them with cooking spray (I use a Misto mister) until lightly coated with spray. Sprinkle with the spice mix or seasoned salt.

Place tray in over, bake for about 15 minutes, then with a spatula, toss the potatoes. Bake 15 more minutes, repeat. Bake 15 more minutes for a total of 45 minutes, until fries are crispy and golden brown.
