2 cups yogurt
2 eggs
2 cups natural bran
2 cups all-purpose flour
1/2 tsp salt
1 cup of brown sugar
1 cup of blueberries or raisins or nuts (or a combo of fruit and nuts)
2 tsp baking soda
1 cup vegetable oil
2 tsp vanilla
4 tsp baking powder

Heat oven to 350º. Measure yogurt into a medium bowl. Mix in soda and set aside (don't leave too long). In a large bowl, eat together eggs, sugar and oil. Stir in bran and vanilla. Sift together flour, baking powder and salt and add to sugar mixture alternately with yogurt. Fold in fruit or nuts. Fill 2 dozen muffins cups and bake for 35 minutes.
Note: Paper cups are handy to use so you don't have to add extra fat and grease the muffin tins.

My father got this recipe from a (health food?) store in Dundas, Ontario called The Horn of Plenty back in the 1970's. I wasn't much of a breakfast eater back then when I was in high school (had a hard time getting out of bed) but I would often grab one of his muffins on the way out the door. When I got accepted into University, my father insisted these muffins were partially responsible for my academic success. Okay, thanks dad.
