Every once in a while, I just crave something that's like french fries but not deep fried. Here's a great solution that every potato lover will enjoy:

Preheat oven to roast at 400º.

Cut up potatoes into cubes of equal size (1 1/2 or 2 inches). Toss in just enough oil to coat and a little bit of salt. Spread on a cookie sheet (lined in tin foil if you want). They cook more evenly if they are not layered or touching.

Place in the middle rack of the oven and cook for about 30 to 40 minutes - stir them around a couple of times. Take out when they are soft on the inside but crispier on the outside. Serve immediately with ketchup. You can also toss them in herbs as well.

Potatoes are healthier than people think - as long as you don't load them up with butter and oil! They are a decent source of vitamin C and also potassium. Plus I'm Irish/English so potatoes end up on my plate at least once a week.
