3 cups rice- cook according to package directions
1 (12oz) package of bacon
1 bunch of green onions
1 pkg frozen peas ( I like the small ones)
2 cups carrots finely shredded or chopped (I use my pampered chef chopper)
1/4-1/2 cup soy sauce
juice from 1 lemon or 2 Tblsp of lemon juice

Cook rice according to directions on package. Let rice cool and place in refrigerator. Cut the green onion slicing both the white onion part and the green tops. Keep them separate. Add the white onion part to the bacon when it is close to being completely brown. Slice bacon into small pieces. (I usually slice it while its frozen into tiny strips) Cook bacon until fairly brown, adding the white part of onion when bacon starts to brown. Use a deep skillet to cook bacon. Saute onion with bacon. Add the cooked rice to the bacon. Do not drain the bacon grease! This is what makes it good. Add rice to skillet mix with bacon and add frozen peas, carrots, lemon juice and soy sauce. Mix ingredients well. You can add soy sauce if needed. Add green onion tops last.
