2 cups cooked rice
2 Tbsp lemon juice
1 medium onion thinly sliced
1 tsp fresh ginger chopper (I buy in a jar already chopped but fresh is tastier)
1 tsp fresh garlic chopped (also comes in a jar, but fresh tastes better)
1/4 tsp tumeric
2 Tbsp oil

Directions:
Directions:
Heat the oil in a large saucepan. Saute onions in the oil. add ginger and garlic. Cook for 1 minute. add turmeric and stir well. Add lemon juice and mix. Add rice. You can add chopped cooked veggies such as beans, peas, carrots. Bake for 20 min. in a baking dish (or just heat it gently in the saucepan to avoid more dishes).

This is a great recipe for leftover rice. It goes well with all kinds of foods such as grilled fish or chicken. Credit goes to Shanta George, yet another Speech Pathologist from my class back in the 80's.
