1 large chicken
6 cloves of garlic smashed and chopped
1 c. red wine vinegar
1 c. water
salt/pepper to taste
1 tbsp. dried rosemary

Directions:
Directions:
Cut up chicken into pieces leaving skin and bone on. Cut breast into smaller pieces so they can evenly cook.
To brown the chicken put the pieces into a shallow roasting pan and top with garlic, salt/pepper, and rosemary.
Bake for 1 hour on º350 turning half way to brown both sides. You can leave chicken in for longer if not browned.
Pour vinegar and water over chicken stirring in the juices at the bottom of the pan.
Place back into the oven and continue to cook for an additional hour or until the juices reduce to more of a sauce. Turn chicken over a few times to evenly coat with the juices.

This was a recipe handed down from Noni. It was a favorite dish that my dad made when we went to the beach. He would keep it in the pan and tie it with a mapeen. We would soak up the juice with fresh Italian bread. Everyone wanted this recipe and he made it for many people.
