1 can lentils* (540 mls) *Instead of canned lentils, use ½ cup dry lentils cooked with 1 cup water (easy to cook, no pre-soaking required.)
1 can chickpeas (540 mls) l
1 cup diced carrots
1 cup diced celery
1 cup diced red pepper
½ cup chopped fresh dill
½ cup chopped fresh parsley
½ cup diced red onion
¼ cup olive or canola oil
2 tbsp. tamari sauce
1 lemon, juiced
¼ cup chopped pitted black olives
¼ cup sunflower seeds
salt and pepper to taste
cherry tomatoes for garnish

Drain the chickpeas and rinse in collander (this reduces the “gas” effect which beans often produce.)
In a large mixing bowl combine lentils, chickpeas, carrots, celery, dill, parsley, onion, red pepper, oil, tamari sauce, lemon juice, olives, sunflower seeds, salt and pepper. Serve cold or at room temperature over lettuce, watercress or arugula. Serves 6 as a side dish, or 4 as a main dish.
