10 long green chiles, roasted, peeled and deveined
1/2 pound grated cheese (Monterrey Jack, longhorn, cheddar or mixture)
3T flour
4 eggs
1/2 cup milk
salt to taste

Directions:
Directions:
Spray a nine-inch pie plate with nonstick spray. Lay half of the chiles on bottom. Sprinkle with salt. Cover with half of the cheese.

Sprinkle with 1/2 of the flour using a sifter.

Repeat layers ending with flour. Beat eggs and milk together and pour on top.

Bake uncovered at 350 degrees for about 30 to 40 minutes or until set.

Top pie shaped wedges with fresh salsa if desired.

I was going through my mothers recipes when I came across this one, she had cut it out of the newspaper. I tried it and we liked it because it reminds us of the Mexican food in El Paso and good memories of family dinners. Plus it is easy to make. Living in Plano we miss the hatch green chiles.
