1 box (two packages) veggie ground round
1 can chickpeas, drained
1 can kidney beans, drained
23 oz salsa
1 package chili seasoning
1 tbsp olive oil
2 large bell peppers, chopped
4 large cloves of garlic, minced
1/2 large white onion, chopped
1 cup water

Directions:
Directions:
Place veggie ground round in large pan on medium-low heat. Using a wooden spoon, break up the meat and add the chili seasoning when soft.
In another pan, cook the bell peppers, onions, and garlic with the olive oil until slightly softened but still crunchy.
Transfer the contents from both pans into a large stewing pot. Add the chickpeas, kidney beans, salsa, and water. Let simmer on medium low heat until thoroughly warmed.
Will be a thick consistency.
Serve with shaved cheddar and sour cream if desired.
