4 large Baking Potatoes
1/4 C. Milk
1/4 C. Sour Cream
Salt to taste
1/2 Tbsp. Butter
1-1/4 C. shredded Cheddar Cheese, divided
1/2 C. Fried and crumbled Bacon Bits, optional

Directions:
Directions:
Preheat oven to 350º.
Clean and scrub potatoes. Pierce skin with a fork once or twice. Bake for 1 hour, or until the potatoes are soft and firm. Let potatoes cool slightly.
Cut potatoes in half and scoop out pulp within 1/4-inch of the shell edge. Mash the pulp with milk, sour cream, salt and butter to taste. Mix in 3/4 C. of the shredded cheese and the bacon bits.
Stuff shells with mashed mixture sprinkle tops with remaining 1/2 C. grated cheddar cheese.
Place potatoes on a baking sheet and bake at 350º for 15 minutes, or until cheese is melted and bubbly.

This is a great make ahead side dish. Just make potatoes through the stuffed stage, cover and refrigerate. Place them in the oven to reheat for the final 15 minutes of cooking time.
