1 lb. penne or medium shell pasta
4 c. half and half
8 tbsp. butter
2 tbsp. all-purpose flour
1 1/2 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. ground black pepper
2 c. grated mild cheddar cheese
2 c. cubed Velveeta cheese product

1. Bring 6 quarts of lightly salted water to a rolling boil in a large stockpot. Add the pasta, stir and return to a boil. Cook for 10 minutes or until pasta is "al dente." Remove from heat, drain into colander and rinse with cold water to stop cooking. Set aside.
2. In a large saucepan over medium heat the butter. When the butter has melted, add the flour, stirring constantly. Cook for approximately one minute.
3. Slowly add the half and half, stirring constantly.
4. Add the salt, pepper, dry mustard and both cheeses, stirring to melt.
5. Continue to stir sauce until smooth.
6. Stir macaroni into the cheese sauce and serve.
