3 pounds boneless smoked pork butt
1/4 cup brown sugar
1 medium-large cabbage, cut into eighths
6 carrots cut into large chunks
1 cup of celery chopped
1 small onion chopped
5 black peppercorns
6 medium potatoes, peeled but left whole
2 teaspoon of cloves
3 bay leaves

Place smoked pork butt in a Dutch oven or stockpot. Cover with water and add brown sugar cloves and bay leaves celery and onion. Cover pot and bring to a boil. Reduce heat and simmer, partially covered, for about 40 minutes per pound.

Halfway through the cooking process, add the cabbage carrots and peppercorns. Bring back to the boil, reduce heat and continue to simmer.

Thirty minutes before the cooking time is up, add the whole potatoes. Return to the boil, reduce heat and continue to simmer, partially covered, until the potatoes are tender.

Transfer meat to a cutting board and slice. Arrange on a platter with cabbage wedges and whole potatoes.

Growing up my dad would make something called boiled dinner but when I would as ask what's for dinner he would say pigs ass and cabbage.. The name just made me crack up as a kid (it was really just ham hocks or sometimes Neck bones) cabbage, carrots and potatoes boiled together.
He added Cloves and it always made the house smell good.. so now when I smell cloves I think of Pigs ass and cabbage and I still love it till this day!
