3/4 c sugar
1/2 c vegetable or canola oil
2 eggs
1 c mashed very ripe bananas(about 3)
1 tsp. vanilla
1 3/4 c sifted flour
2 tsp baking powder
1/2 tsp. baking soda
1/4 tsp. salt

Directions:
Directions:
Combine sugar, oil and eggs. Beat vigorously until foamy. Add bananas and blend thoroughly. Sift together flour, baking powder and baking soda until blended. Add Vanilla and stir thoroughly. Pour into greased bread pan. Bake 325 degrees for about 1 hour until crust is brown and use toothpick for doneness. Remove to cooling rack and let stand for 10 minutes be fore inverting.
For muffins use greased muffin tin and bake at 325 degrees fro 25-30 minutes and again test for doneness with toothpick
