Extra Virgin Olive Oil
Fresh Rosemary Sprigs
Peeled and halved fresh garlic cloves
Glass bowl with cover or saran wrap if you don't have cover
Pancake Batter Glass Bowl with Plastic cover works great if you have one.

Directions:
Directions:
Determine the size of the olive oil batch you want to make based on the volume of the containers you will preserve the oil in.

Pour the Olive Oil into the glass bowl
Add whole branches of rosemary
Add generous amounts of peeled and halved garlic cloves
Submerge the rosemary branches and garlic
Cover and set in a cool dry place for approximately one week or until the desired level of flavor is present.
Carefully remove the rosemary branches and toss
Remove the garlic cloves (Use them in a sauce or soup if desired)
Pour oil through a fine sifter to ensure that all particles are removed.
Pour oil into storage containers

I use this olive every day. It is wonderful for fish, chicken or veggies. The oil also makes a nice gift. For those of you with a rosemary bush, all the better!
