Tenderloin filets-1 and 1/2 inches thick(I buy a whole untrimmed tenderloin at Costco and make my own, much less expensive since you can use the rest of the tenderloin for stroganoff or stir fry)
Thinly sliced proscuitto
Mushroom Duxelle*
Puff Pastry
Egg for egg wash
Thyme
White wine
Salt
Pepper

Directions:
Make the mushroom mixture early in day . To make, finely chopped any type mushrooms , amounts vary depending on how many filets you have, and set aside. Chop 2 large shallots and saute in olive oil until soft. Add mushrooms, chopped thyme and white wine and cook down until mushrooms have most of the liquid out of them. Let cool.
Take out filets and let come to room temp. Roll out puff pastry on floured surface and cut into squares large enough to wrap the filets. Place a piece of puff pastry on a cookie sheet lined with parchment paper and place a slice of proscuitto on pastry. Take a spoonful of the cooled mushroom mixture and spread on proscuitto. Top with filet and season with salt and pepper. decoration Wrap and seal edges and turn over, seam side down. Continue until all filets are done. Mix eggs and brush the pastry wrapped bundles the the egg wash. You can make a pretty decoration on top of you have some leftover pastry.
Bake in a 425 º oven until an instant read thermometer reaches 125 for rare , 140 for medium rare.. This should not take more than about 15 minutes. Ovens vary- watch carefully as not to overcook. Serve with a Bernaise sauce if desired.
