Pan Seared Salmon with Cucumber Dill Topping Recipe

Ingredients: 3-4 Boneless Salmon Filets 1/2 lemon 2-3 Tbsp. Extra Virgin Olive (Rosemary/Garlic if you have it) 2 tsp. Seafood Magic (Chef Paul Prudhomme)
Topping: 1/2 c. Sour cream 1Tbsp. Dijon Mustard 1/4 tsp. horseradish (optional) 2 Tbsp. finely diced cucumber 1 Tbsp. finely diced red onion 1 Tbsp. fresh chopped dill or 1 tsp. dried dill 1/4 tsp. pepper 1/8 tsp. salt

Directions:Wash and dry salmon filets. Squeeze 1/2 of the lemon juice over the fish, flip and squeeze the rest of the juice. Sprinkle Seafood Magic (found in most grocery stores in the spice aisle) generously over the fish. If you have fresh dill on hand chop and sprinkle over the filets. Let the fish rest while you assemble the topping. Heat the olive oil in a heavy skillet, cook the fish on high at first to give it a nice sear, reduce heat and cover for 2-3 minutes, turn fish and cook an additional 2-3 minutes or until the fish flakes easily with a fork.
Combine all topping ingredients and still well. Add more horseradish and Dijon for a spicier topping. Topping may be made several hours ahead of time and chilled to enhance the flavors. |

Notes: Seafood Magic is a staple in our kitchen. We use on shrimp, fish and even in tuna salad. Using a flavored olive oil can add a nice flavor enhancement. Flavored olive oils can be found in specialty stores or it is very easy to make your own. The topping in this recipe is refreshing and there is an interesting hot/cool aspect which goes well with any mild fish.
