3 eggs
1 c. oil
2 c. sugar
2 c. grated, raw, unpeeled zucchini.
2 1/2 c. flour
1 t. salt
2 t. baking soda
2 t. baking powder
3 t. cinnamon
2 t. vanilla
1/2 - 1 c. chopped nuts

Directions:
Directions:
Beat eggs until light and foamy. Add oil, sugar and zucchini. Stir in flour, salt, baking soda, baking powder and cinnamon. Add vanilla and nuts. Blend in well. Pour into two greased and floured 9X5X3-in. loaf pans. Bake at 350º for 50 minutes to one hour. Check for doneness using toothpicks about 1 1/2" from edge. Toothpicks put in center will be clean but moist. Cool bread in pans for about 15 min. then use spatula down sides and ends of pan to remove from pans and cool on rack.
