3 eggs beaten
1 cup white sugar
1 tsp baking soda
2/3 cup pumpkin purée
1/4 tsp salt
3/4 cup flour

FILLING
1 pkg - 8oz cream cheese
2 Tbsp butter
1 tsp vanilla
1cup of icing sugar
Lemon juice, a few drops

PREHEAT oven to 350

MIX all the above cake ingredients and set it aside.

PREPARE a 10x15 baking sheet pan with wax paper (spray paper)

BAKE at 350 for 12mins. Cool for a few minutes then roll up and put it in the fridge to keep it cool. Keep wax paper on till you roll it

MIX all the above filling ingredients and set it aside

CAREFULLY unroll cooled pumpkin roll, spread with filling and re roll removing the wax paper (roll it into a new sheet of wax paper before putting it back into the freezer.

PUT in freezer until ready!!

SPRINKLE with powdered sugar before serving
