3 c. cooked chicken, chopped into bite-sized pieces
1 pkg. Uncle Ben's Long Grain and Wild Rice mix
1 can Cream Of Mushroom Soup
1 4-oz. jar sliced pimentos, drained
1 small onion, chopped
1 c. mayonnaise
1 8-oz. can water chestnuts, drained, sliced, and chopped into smaller pieces
2 16-oz. cans French style green beans, drained
Salt and pepper to taste
Parmesan cheese or paprika, optional

Directions:
Directions:
Cook wild rice according to direction on the box. Mix all ingredients. Pour into a 9" x 13" dish. Sprinkle with Parmesan cheese or paprika, if desired. (Note: If you wish to freeze all or part of this casserole, it freezes well at this point. Just thaw to room temperature before baking.) Bake at 350º for 30 minutes in a preheated oven.
