Large white mushrooms
1 stick of butter
Minced garlic cloves
Parsley
Parmesan cheese
Chopped scallion
Bread crumbs
Minced pepperoni
White wine
Paprika
Lemon zest

Directions:
Directions:
Remove stems from mushroom caps and set aside. Place caps in a 13x9 non stick pan sprayed with cooking spray. Meltbutter in a saucepan over medium heat. Add minced mushrooms caps, minced scallions, garlic parsley pepperoni and lemon zest and sauté until softened. Remove pan from heat and add enough equal parts bread crumbs and Parmesan cheese to form a stuffing-like mixture, fill caps, sprinkle tops with paprika, sprinkle white wine over caps with a bit for the pan and place in 400 degree oven for 20 minutes or until mushroom caps are soft.
