3 lbs. yellow summer squash, cut in cubes
1/2 c. finely chopped onion
2 eggs, beaten
1 tbsp. sugar (optional)
3/4 c. melted butter (divided)
3 c. coarsely crumbled saltine crackers

Directions:
Directions:
Cook squash in salted water and drain well. Mash squash, drain again to remove any excess water.
Mix in onion, eggs, sugar and 1/4 c. butter. Place in 2 quart buttered casserole dish. Spread cracker crumbs evenly over squash mixture and drizzle the remaining 1/2 c. melted butter over the crackers.
Bake in 350 degree oven for 1 hour or until thoroughly heated through.
