1 lg eggplant
2 eggs, beaten
1/2 c milk
1/2 c dry breadcrumbs
1 c shredded cheese
1/4 c melted butter
3/4 c crushed Ritz crackers

Directions:
Directions:
Pare and cube eggplant. Boil in salted water for 15 min. Drain well and mash. Add eggs, milk, breadcrumbs and 3/4 c cheese. Add salt and pepper to taste. Blend well and place in a greased casserole dish. Mix crackers and butter and sprinkle on top. Top with 1/4 c cheese. Bake at 350º for 30 min.
