Ingredients:
Ingredients:
2 large cartons of chicken broth
3 boneless skinless chicken breasts (or how much chicken you want in it)
2 cans undrained Rotel Tomatos I use mild because the kids don't like things very spicy (or similar item in another brand)
1-Large can of corn or 1 bag of frozen corn if I use the canned corn I don't drain it
2-packages of taco seasoning (I again buy the mild for the kids)
1-small onion

Bag of restaurant style tortilla chips (they don't get soggy in the soup as fast)
Shredded cheese of choice. I like to use montery jack cheese.

Directions:
Directions:
Cut chicken into bite sizes pieces, chop the onions and cook them on the stove. (This isn't a necessary step if you let the soup cook all day)
Add all the ingredients except the chips and cheese and cook on low all day.

Once you put your soup in the bowl top it with cheese and chips then enjoy. :-)

Once you make it for your family you can customize it more to their likes. For instance I often add more corn as the kids really like it.
