Chicken and Okra Casserole:

5 T. olive oil
3 1/2# free-range chicken, jointed
1 large onion, finely sliced
14 oz. can tomatoes, finely chopped
1 tsp. tomato paste
1/2 c. water
1 T. oregano
1 1/2# okra
Salt and freshly ground pepper

Directions:
Directions:
Rinse, dry, and lightly brown chicken pieces in the hot oil in a large saucepan.
Remove chicken, add onion, and when golden, put chicken pieces back with the tomatoes, tomato paste, herbs, seasoning and water.
Cover and cook for 20-30 minutes.
Prepare okra by peeling the heads thinly without bruising.
Rinse gently in a bowl of cold water and drain.
Spread the okra evenly over the chicken and shake the casserole a little.
Add more seasoning, cover and cook gently for 30 more minutes.
Once the okra has been added do not stir; shake and turn the saucepan instead.
