6 eggs
3 tbsp. half-and-half, light cream or milk
1/4 tsp. salt
1/8 tsp. ground black pepper
2 tbsp. I Can't Believe It's Not Butter Spread

Asparagus Filling:
2 tbsp. butter spread
1/4 cup chopped shallots or onions
1 1/2 cups cut-up asparagus with salt and pepper to taste
1/4 cup grated Parmesan Cheese

Directions:
Directions:
In a small bowl, beat together eggs, milk (cream), salt and pepper; set aside.

In 8" nonstick skillet, melt 1 tbsp. spread and add half of egg mixture. With spatula, lift set edges of omelet, tilting pan to allow uncooked mixture to flow to bottom. When omelet is set and slightly moist, add filling. Fold omelet; cook 30 seconds. Repeat with 1 tbsp. spread and rest of egg mixture.

Asparagus Filling:
In 10" skillet, melt 2 tbsp. spread over medium-high heat; cook shallots until tender. Add asparagus and salt and pepper to taste. Cook until asparagus is tender. Spoon into omelets. Sprinkle with Parmesan Cheese and service with side of fruit.
