Alfredo Sauce (see recipe)
1 clove garlic
1/2 red onion
8 oz Pancetta
3 Roma tomatoes
2 cubed or sliced chicken breasts
2 tbls butter
2tbls heavy cream
1 cup Asiago Cheese
A few pinches of Rosemary
Olive Oil coating the pan

salt and pepper to taste

In a heated sauce pan coat the bottom with olive oil and combine butter, garlic, onions, and chicken, rosemary, salt and pepper. Cook until the onions become translucent and the chicken is cooked. Add Pancetta.

In another pot add heavy cream and 1/2 cup Asiago Cheese to the Alfredo sauce. Simmer 5-6 min or until the cheese has melted.

Add the sauce and tomatoes to the chicken mixture. Simmer 8-10 min stirring occasionally.

Mix with the bowtie nodules sprinkle with Asiago and/or Parmesan cheese and enjoy!

Personal Notes:
This is not an exact recipe I change it up all the time. You can add more or less cheese or tomatoes to taste. Sometimes I buy the shredded mixed Italian cheese to use instead of just getting Asiago. I have also replaced the Asiago with Romano cheese when I haven't found the Asiago at the supermarket. You can also replace bacon or prosciutto for the pancetta. It takes a little work but it is one of the boys favorite recipes.
