Ingredients: 1) Potatoes – prefer red but others ok, boil in salt water until barely done, refrigerate until cold; partially peel and cut into cubes. 2) Boiled eggs – cool, peel, and slice. The more the better, at least 1 egg per 2 medium potatoes. 3) Onions, chopped fine (or shallots), and can add some green onion including tops for color 4) Cucumber, cubed 5) Orange or yellow bell pepper – optional. 6) Chopped ham, or spam, or crumbled crisp bacon 7) Best Foods mayonnaise 8) Pepper or garlic pepper to taste.

Directions:Cook potatoes and eggs several hours – or night before, mixing salad. Peel, slice and dice. Toss together with rest of ingredients except mayonnaise. Add enough mayo to coat and pepper to taste. Mix well but be careful not to mash. Using an oversize bowl or pan will help a lot with this, and will help keep the serving bowl neat. Comes out best if completed salad is refrigerated for an hour or two before serving.
Other variations: a) Peel uncooked potatoes, cut into cubes, and soak in salt water for about 30 minutes. Drain well, pat dry. Toss with olive oil, and then toss in a mixture of herbs and seasonings. Arrange on a baking pan and bake until just done. Cool completely in fridge before mixing with the rest of ingredients. b) Sear, roast or grill onions and bell pepper in olive oil, just enough to brown edges but retain crunch. Cool before mixing in. |
