1/2 cup sifted cake flour
1/4 cup unsweetened cocoa
1 tsp baking powder
1/4 tsp salt
1/2 cup white sugar
3 eggs
1/4 cup milk
1/8 cup confectioner's sugar
1 1/2 cup whipped cream
2 cup whipping cream
8 squares semi sweetened chocolate
1//4 cup butter

Preheat oven to 350 F. Grease a jelly roll pan and line with wax paper. Grease wax paper. Sift flour, cocoa, baking powder, and salt. Beat sugar and egg yolks at high speed until light and fluffy. At low speed alternately add milk and flour mixture ending with flour mixture. Using clean beaters, beat egg whites at high speed until stiff and not dry. Fold into egg mixture 1/3 at a time. Spread mixture in pan. Bake cake at 350 F for 12 min.

Dust a clean cloth with confectioner's sugar. Turn cake out onto cloth. Remove the wax paper and trim cake. Starting with the long side, roll up the cake. Transfer seam down to wire rack and let cool for 30 min.

Unroll cake and remove cloth. Spread whipped cream over cake within 1" of edges. Re-roll cake. Place seam side down on plate.

Frosting: In a small sauce pan, bring heavy cream, melted chocolate and butter to a boil over medium heat, stirring vigorously. Remove from heat and let stand until set. Spread frosting over top and sides of cake.

Decorate as you wish.

This recipe takes some time but I like to make it for Christmas dinner dessert. If I get too "cooked" out I use bought chocolate icing. This is a nice light dessert after a big meal and who can resist just a little chocolate for dessert.
