8 pieces of thin sliced chicken breast
flour with salt & pepper on plate for dredging
1/4 c. olive oil
1 carton sliced mushrooms
1 c. Marsala Wine
~2 T. butter
3 c. Chicken broth
salt & pepper to taste
flour or cornstarch for gravy

Directions:
Directions:
1 - Heat olive oil in large sauté pan over medium-high heat.
2 - When oil is hot, dredge both sides of chicken breasts in flour, s&p mixture -- shake off excess flour -- then place in pan. Saute chicken, turning once, until lightly browned on both sides. Transfer chicken to warm plate.
3 - Drain all but a little bit of oil & add mushrooms -- sauté until they begin to release juices.
4 - Add Marsala wine & scrape loose all residues with spoon.
5 - Add butter, chicken broth, s&p to taste. Simmer until liquid is reduced by half, approximately 5 mins.
6 - Thicken sauce with flour or cornstarch and cold water. Add chicken back into sauce and cook until chicken is just heated through again.

Serve with egg noodles, mashed potatoes, pasta -- or whatever your heart desires! So Yummy!

Found this recipe on The Italian Chef website. It really is a very good and pretty simple recipe for chicken marsala. We enjoy it every time I cook it! =)
