1 box yellow cake mix
1 1/2 tsp baking powder
1 tsp baking soda
4 medium or 3 large eggs
3/4 cup oil
1 tsp vanilla
1 1/2 cup mashed bananas

Directions:
Directions:
In a mixing bowl combine the cake mix, baking powder, baking soda, oil, vanilla and mashed bananas and egg yolks. Mix thoroughly. Beat the egg whites until stiff. Fold the egg whites into the cake mixture and incorporate gently. Pour the mixture into a 9" x 13" cake pan that has been sprayed with Pam (I like to line the pan with wax paper if you are going to remove the cake). Bake at 350 F for 40 - 50 min. This cake can be served from the pan or removed to a cake plate and served there.

This recipe is given by popular demand after the get together at Knee Hill Community Hall. This is a great way to use up those soft, black skinned bananas. The cake is always a hit. Enjoy.
