1 1/2 C pre-sifted flour
2 TBSP sugar
3 TSP baking powder
1/2 salt
1 egg, beaten
1 1/2 C milk
3 TBSP melted shortening or salad oil

Directions:
Directions:
Measure flour without sifting into a bowl.
Add sugar, baking powder, and salt to sifted flour. Stir together.
Add beaten egg to milk and stir into dry ingredients lightly.
Stir in oil and mix until completely combined, leaving batter slightly lumpy.
Pour onto hot pan approx 1/4 C of batter for each cake.
Cook until fluffy and bubbly and underside is golden brown.
Turn over before bubbles break.
