½ c shortening
1 ¾ c sugar
1 tsp salt
1 tsp vanilla
1/3 c cold water
½ c cocoa
2 ½ c flour
1 c cold water
3 egg whites
1 ½ tsp soda
1/3 c cold water

Frosting:
2 c sugar
2/3 c water
½ tsp cream of tartar
Dash salt

Directions:

Preheat oven to 350 degrees

Stir shortening to soften. Gradually add 1 cup of the sugar creaming together till light. Add salt and vanilla.

Combine 1/3 c cold water and cocoa; beat into creamed mixture.

Add flour alternately with 1 c cold water, about a third at a time; beat after each addition.
Beat egg whites till soft peaks form. Gradually add ¾ cups sugar, beating till stiff peaks form. Fold into batter.

Dissolve soda in 1/3 cup cold water. Add to batter, stir well but don’t beat – you want the egg whites to not break back down.
Bake in two paper lined 9 in round pans at 350 degrees for 30 minutes or till done.

Frost with;

Fluffy Frosting
2 c sugar, 2/3 c water, ½ tsp cream of tartar, Dash salt
Bring above to boil, stir till sugar dissolves.
Slowly add 2 unbeaten egg whites, beating constantly with electric beater until spreading consistency. Add 1 tsp vanilla and beat.

This makes a really good chocolate cake, and the frosting is much lighter and fluffier than the canned stuff. Used to be one of my favorites back in the days when I baked from scratch. I have had this recipe since I was a teen – probably came out of one of mom’s old cook books.
