1 T. canola oil
1 large green pepper, seeded and chopped
1 poblano pepper, seeded and chopped
1 medium onion, chopped
1 large jalapeņo pepper, seeded and chopped
1 T. finely chopped garlic
1 T. + 1/2 tsp. cumin
1 1/2 tsp. coriander
2 lb. bone-in split chicken breasts, skin removed
2 cans cannellini beans, drained and rinsed
1 c. low-sodium chicken broth
1 T. lime juice
1/2 tsp. salt
1/4 c. sour cream
1/4 c. cilantro leaves

Heat oil. Saute peppers, onion, garlic, 1 T. cumin and 1 tsp. coriander in a skillet. Continue stirring for 6 minutes. Transfer vegetables to a slow cooker. Add chicken, beans, and broth. Cover, cook on high for 4 hours and on low for 6 hours. Remove chicken with a slotted spoon. Check liquid in the crock pot for bones. Stir in remaining 1/2 tsp. each of cumin and coriander, the lime juice and the salt. Shred the chicken. Stir into the slow cooker with the rest of the ingredients. Serve with cilantro and sour cream.

Contrary to the accepted popular belief, chili does not have to be red! This is very good chili, and it is very...beige. Since it is a crock pot recipe and takes 10 hours just for the cooking, you will have to decide to cook it on the day before and get an early start on the day of....but once you get it in the pot, dinner is done!
