3 cups mashed cooked sweet potatoes
1/2 cup sugar
2 eggs
1 tsp vanilla
1/3 cup milk
1/2 cup butter

Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup butter
1 cup finely chopped nuts
coconut flakes (added by Prowells)

Directions:
Directions:
Peel and boil sweet potatoes until tender. Mash potatoes and combine sweet potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter. Beat with mixer until smooth. Spoon into 2 quart greased casserole dish.

Topping: Combine brown sugar, flour, 1/3 cup butter and pecans. Sprinkle over potatoes. (The Prowells put coconut flakes with the topping mixture, and I recommend it!)

Bake at 350 degrees for 30 minutes.

This recipe is from Irene Anglin, from Mexia, Texas. This is a staple at the Prowell Thanksgiving dinners. I debated putting it under the dessert category, because it's so sweet and delicious. The Prowells make 2 pans-worth with different toppings so that everyone gets just what they want: some with nuts & coconut, some with marshmallows, some with just nuts.
