8 oz. fully cooked smoked turkey sausage
1 medium onion, chopped
1 T. minced garlic
6 c. reduced sodium chicken broth
3 medium Yukon Gold potatoes (about 1 1/2 lb.) peeled and cut in 1/2" chunks
12 oz. fresh kale, stems removed and leaves chopped (8 c.)
Crushed red pepper (optional)

Directions:
Directions:
Heat a large pot over medium high heat. Add sausage and saute 5 minutes, or until browned. Add onions and garlic. Saute 3 minutes or until onion starts to soften. Add broth and bring to a boil. Stir in potatoes and kale. Simmer partially covered for 10-12 minutes or until potatoes and kale are tender. Serve with crushed red pepper. if desired.

Nourishing and delicious. Fresh spinach can be substituted for the kale. Add a couple carrots cut in small chunks for a great color contrast...and additional nourishment.
