1 cup mushrooms, quartered and roasted
2 cups butternut squash, cubes and roasted
2 tbsp. camelina oil
2 tbsp. brown sugar or honey
2 cups quinoa, cooked
3 green onions, chopped
1/2 cup carrot, shredded
1/2 cup pecans, toasted and crushed
1/2 cup aged cheddar, shredded
2 tbsp. cider vinegar
2 tbsp. roasted onion and basil Camelina oil

Preheat BBQ or oven to 375 degrees. Dice the squash to small bite size pieces and quarter the mushrooms. Toss the squash and mushroom with Camelina oil, sugar, salt and pepper. Place them in tin foil and cook on the BBQ until soft, about 20 to 25 minutes.
In a large bowl, toss cooked quinoa, shredded carrots, green onion, pecans and cheddar together. Dress with Roasted Onion and Basil Camelina Oil and vinegar.
Toss the warm roasted squash and mushrooms (along with juices) into the quinoa mixture, season with salt and pepper.
Serves great warm or chilled and also makes a great stuffing for peppers or chicken.
