Breanna introduced me to this recipe and it really is fantastic!

5 whole Tomatoes, sliced thinly
1/4 cup Butter
1 Onion, chopped
1-2 cloves Garlic, chopped
1 tsp Salt and Pepper
1/2 tsp dried Basil or 1/4 cup Fresh Basil
2 cups White Bread Cubes or dried Croutons work well
2 tsp Brown Sugar
1 tsp Balsamic Vinegar

Options: top with 1 cup grated cheese of your choice ( Parmesan, Asiago or Romano work nice )

Heat oven to 375 degrees

Saute chopped Onion in butter till transparent, in a large frying pan.
Add Salt, Pepper, Basil, Brown Sugar, Balsamic Vinegar and mix in.
Gently mix Tomatoes into pan.
Stir in Bread Cubes or Croutons until all ingredients seasoned.
Top with shredded Cheese.

Pour Tomato Bread mixture into buttered 9"x13" casserole.
Bake for 30-35 minutes.

You can make this casserole ahead of time and refrigerate. Bring to room temperature and bake before serving.
