I met Tabitha Langel at Grass Roots Prairie at The Forks when my good friend Betty Kleinsasser introduced me to her. Tabitha is an ex Hutterite and founded this amazing bakery. It is a bread dish but loaded with roasted vegetables so I filed it under vegetables. Tall Grass grinds their own flour so everything they make IS truly Grass Roots!

8 cups Chopped fresh Vegetables: an assortment of any the following works well. Onions, Celery, Mushrooms, Peppers, Zucchini, Asparagus, Garlic.

1 Tbsp Majoram
1 1/2 tsp Black Pepper
1 tsp Salt
3 Tbsp Oil (Grassroots fresh pressed organic Sunflower Oil recommended)
7 Eggs
2 1/2 cups Cream ( I used Half & Half, though I believe Tabitha uses whipping cream)
12 cups cubed Bread (of course Tabitha uses her homemade multi grains)
1 cup diced Fresh Herbs (Parsley, Basil, Rosemary and/or Dill )
3/4 Grated Romano Cheese
3/4 Grated Aged Cheddar Cheese

Directions:

On a large baking sheet, Mix Vegetables, Majoram, Salt, Pepper and Oil well, using your hands.
Roast at 500 degrees for 10-15 minutes and set aside.

Whisk together Eggs and Cream until frothy. Divide into 2 parts and set one aside.
In a very large bowl, add Bread, fresh Herbs and Romano Cheese to one half of the Egg-Cream mixture.

Lay half this Bread Mixture on a well-greased Parchment lined 11"x17" baking dish.
Layer half the Roasted Vegetables over.
Add remaining layer of Bread Mixture.
Top with remaining half of Roasted Vegetables.

Sprinkle with Cheddar Cheese.
Now pour 2nd half of Egg-Cream Mixture over cheese.

Bake at 350 degrees for 30 minutes. Cover with Parchment or lid and bake another 30 minutes.
Remove from oven, let sit 10 minutes, cut and serve hot.
