1 whole chicken, boiled, skinned and de-boned (retain the stock)
2 bay leaves
1-2 carrots, chopped
1-2 stalks celery, chopped
Stock from boiled chicken - best to skim about half the fat off and discard
1 bag of 15 bean soup mix with flavor packet
1 pound smoked sausage, cut in bite size pieces
1 28 oz. can crushed Italian tomatoes
Juice of 1 lemon
Tabasco or other hot sauce
Salt and pepper

Directions:
Combine ingredients in a large soup pot. Bring to a boil and reduce to a simmer. Cook until beans are tender and soup thickens. It will be almost like a "stew."

This soup can also be done in a crock pot. It freezes very well and tastes even better the second day.
