1/4 c. olive oil
1 clove garlic, minced
1/2 c. chopped onion
2 stalks celery with leaves, chopped
2 medium carrots, pared and diced
1 can (1 lb.) crushed tomatoes
3 beef bouillon cubes
2 c. pared diced potatoes
1 c. chopped cabbage
3 T. parsley, chopped
2 tsp. salt
1/4 tsp. pepper
1 tsp. marjoram
1/4 tsp. rosemary
1 c. uncooked ditalini pasta
1 pkg. frozen peas
1 can red kidney beans
Grated Parmesan cheese

Heat oil in a 6 qt. kettle. Add garlic, onion, and celery. Saute until tender (about 5 minutes). Add carrots, tomatoes, bouillon cubes, potatoes, cabbage, parsley, salt, pepper, herbs and 6 c. water. Bring to a boil. Reduce heat and simmer covered 40 minutes. Add ditalini, peas, and kidney beans. Bring to a boil again and let simmer about 30 more minutes. Serve and pass the Parmesan cheese.
