I think this is the first recipe I clipped out of my Mom's Chatelaine Magazine and made it 'my special recipe'. A lot of my Mom's meal ideas came from many years of Chatelaine subscriptions. She read through them every month, marking recipes she wanted to try. I don't know if she really paid attention to the articles or fashion ideas in each edition….just the recipes. They were made for housewives and used simple ingredients. The results however, were never disappointing as they were "tried and true in the Chatelaine Home Kitchens".

Meat Balls: Make your basic meatballs and choose which sauce you want!

1 1/2 lbs. Ground Beef or Ground Beef and Pork Mixture
1 Egg, beaten
1/2 cup fine Bread Crumbs
Seasoning: Salt, Pepper, Season Salt, Montreal Steak Spice...

Sauce # 1: Ketchup Sweet and Sour
(this basic Sweet and Sour recipe can be used instead of buying sauces)

1 cup Ketchup
1/2 cup Water
1/4 cup Brown Sugar
1/4 cup Vinegar
2-3 Tbsp Worcestershire Sauce

Sauce # 2: Pineapple Sweet and Sour Sauce

1 Green or Red Pepper, cut into small slices
2 tsp Oil

1 can Pineapple Chunks or Tid Bits and Save 1/3 cup of Juice
1 cup Beef Bouillon
1 Tbsp Soya sauce
1/2 cup Vinegar
1/3 cup Sugar

2 Tbsp Cornstarch
1/4 cup Water

Directions:
Meat Balls: Mix Ground Beef, Egg, Crumbs, and Seasonings of your choice, gently together. Form into 1 - 1 1/2 " Meatballs. Fry till browned OR bake at 350 degrees for 30 minutes on a Parchment lined cookie sheet, till done.
Place in a casserole dish or small roaster.

Sauce # 1: Mix all together in a small Pot. Bring to boil for few minutes. Pour over cooked Meat Balls. Bake at 350 degrees uncovered for 40 minutes.

Sauce # 2: Saute Pepper slices in Oil in a Medium Sauce pan, for 4 minutes.
Add Beef Bouillon, Pineapple Juice,Soya Sauce, Vinegar, Sugar and bring to a simmer.
Thicken with 2 Tbsp Cornstarch mixed with 1/2 cup Water.
Simmer for a few minutes.

Pour over cooked meat balls in oven proof dish. Bake at 350 degrees uncovered for 40 minutes.

Most recipes with sauces always taste better the next day, once the flavours have had a chance to blend and soak in.
Its a good idea to make extra Meat Balls to freeze; its a quick meal to make a sauce to serve with them.
