1 tablespoon sugar
1 packet (2 1/4 teaspoons) active dry yeast
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon salt
1/4 cup olive oil

Directions:
Directions:
In a small bowl, combine warm water and sugar, stirring to dissolve the sugar. Sprinkle yeast over top and give a quick stir to combine. Allow to rest in a warm place (like the microwave) until foamy, about 5 minutes.

Meanwhile, in a large bowl, whisk together flours and salt. Make a well in center, then pour in the yeast mixture and olive oil. Stir with a wooden spoon, working outward from the center, until the dough begins to come together. Then, begin to knead until all bits are incorporated and you have a smooth ball of dough (3-5 minutes). Place in a large bowl coated with cooking spray, lightly spraying the top of the dough as well. Cover and let rise in a warm place about 45 minutes or until doubled in size.

Divide into 2-4 balls of dough, depending on number of crusts desired (2 for medium pizzas, 4 for individual sized pizzas). Use hands to pat/stretch into desired shape, add toppings, then bake at 425º for 10-15 minutes or until crust is golden brown.

I usually make a batch and divide the dough into 4 pieces. I use one and wrap each of the remaining three in plastic wrap, place in a ziploc freezer bag, and freeze. Place in the fridge to thaw the night before and bring to room temp on the counter right before adding toppings and baking.
