2 T. butter or margarine
1/2 small onion, chopped
2 T. flour
3/4 tsp. salt
3 c. milk
2 c. cooked potatoes, diced
dash of pepper

Directions:
Directions:
Saute chopped onion in melted butter or margarine until the onions are clear. Quickly stir in flour and add milk immediately. When mixture thickens to a creamy consistency, add the diced potatoes. Stir, heat through, and add a dash of pepper.

When children in the Astin household were offered a bowl of potato soup (but without the onions and the pepper), they always knew that their illness was at an end. The first offering of food was always ginger ale, the second was overcooked (charred) toast, the third consisted of ginger ale and saltine crackers...if no upsets resulted form any of those food groups, then you got a bowl of potato soup. We grew up associating potato soup with illness, but it is obviously delicious on its own merits.
