l lb. of poke salad (I pick this from wild plants on the farm)
2 eggs (beaten)
salt and pepper

Directions:
Directions:
Wash thoroughly and remove all long stems from the greens. Use only the smaller, tender parts, usually the top leaves on the plants. Place in a medium saucepan of water and boil until the greens are very tender and soft. Drain and remove all water you can. Place in a skillet of cooking oil or bacon drippings and cook down until moisture is gone. Add scrambled uncooked eggs to greens and stir until eggs are done.
