White or yellow corn tortillas
1lb ground hamburger
salt to taste
pepper to taste
chili pepper to taste
chili powder to taste
paprika to taste
garlic salt to taste
Cojito cheese
Colby Jack cheese
Pepper jack cheese
Red or Green Enchilada sauce (La Victoria) or (Las Palmas)
1/2-1 whole yellow onion
green onion
lettuce
sour cream
jalapeņo cream sauce(given in sauces section)
diced tomatoes

Directions:
warm tortillas and set aside
add a little of the enchilada sauce to bottom of cake pan set aside
brown meat, diced onions, and spices all to taste of how salty and spicy you like
take tortilla and add a spoonful and a half of meat and mixture of cheeses roll up and place in pan repeat until full.
Pour rest of sauce over entire cake pan
Sprinkle cheese over to cover the top of enchiladas place in oven at 375 for 15-20mins
then add a little more cheese to top and broil until brown and bubbly
top with sourcream,lettuce, tomatoes, green onions, and jalapeņo cream sauce

You can also make it like a pie/slash casserole instead of rolling individual servings follow all directions just layer tortillas,meat, cheese,sauce,repeat and also can do a half and half (half green and half red sauce so everyone gets a taste of both)
