4 tbsp olive oil
1/4 lb sweet Italian sausage links, casing removed, meat crumbled
1 medium yellow onion, chopped
2 cloves garlic. minced
1 can (28 oz) Italian plum tomatoes, drained, chopped
4 tsp. salt
t5 tbsp minced fresh Italian parsley leaves
1 lb uncooked ziti pasta
2 cups part-skim ricotta cheese
1 cup grated fresh part-skim mozzarella cheese
1/2 cup freshly grated Parmesan cheese

Grease shallow 2 qt baking dish; set aside. In heavy medium skillet, heat 3 tbsp oil over medium heat. Add sausage, onion and garlic, sauté 5 minutes or until onions are softened, breaking up sausage with wooden spoon. Add tomatoes, salt, pepper flakes, and 4 tbsp parsley; heat to boiling. Reduce heat; simmer gently 20 minutes.

Preheat oven to 350 degrees. Cook ziti as package label directs but only for 8 minutes. Drain ziti, reserving 1/4 cup cooking water. Return ziti and reserved water to pan used to cook pasta. Stir in ricotta, half the mozzarella and the tomato sauce. Mix well until completely blended. Spread evenly in baking dish. Sprinkle with remaining mozzarella, the Parmesan and remaining parsley; drizzle with remaining oil. Bake 25 minutes or until hot and cheeses are lightly browned. Let sit 5 minutes before serving.
