1 large eggplant
1 stick butter
1 box Jiffy cornbread mix
Directions:

Peel eggplant and slice medium to thin, dip each slice in melted butter, then in cornbread mix.
Bake on cookie sheet lined with foil and sprayed with Pam at 400º for 30 minutes turning once during baking time.
