2 devil's food cake mixes
4 eggs, beaten
2/3 c. oil
8 oz. cream cheese, softened
1/2 c. margarine, softened
3 - 4 c. powdered sugar
1/2 tsp. vanilla
Red or green food coloring, if desired
Directions:
Directions:
Preheat oven to 350º
Combine cake mixes, eggs and oil (batter will be stiff)
Roll into 1 inch balls and place on ungreased cookie sheet, flattening with the bottom of a glass slightly
Bake for 8 - 10 minutes
Let cool
Beat cream cheese and margarine until smooth
Add powdered sugar, vanilla and food coloring, if desired
Spread on half the cookies and top with other half

Can add 1/2 tsp. peppermint extract and 3 soft peppermint sticks, ground very fine in Ninja to filling
