4 quarts thinly sliced small cucumbers
6 medium onions sliced
3 sweet green peppers sliced
pickling salt



Pickling Juice:
½ quart white vinegar
3 cups white sugar (or 1 cup sugar & 2 cups monk fruit sugar substitute)
1 tsp. turmeric
1 tsp. ground ginger
1 tsp. celery seed
1 tsp. mustard seed

Directions:
Directions:
Slice unpeeled cucumbers. Place the cucumbers in a large dish and put pickling salt between the layers. Add onions and peppers and a little more salt and stand for 3 hours.
Drain vegetables and rinse well and drain again
Simmer vegetables in the pickling juice at almost a boil for 4 to 5 minutes until cucumbers turn clear. Place in sterile jars, put lid on and let stand till the jars seal (the lids will become concaved)

Use long thin cucumbers or small cucumbers (about an inch in diameter) so the seeds will not be too large and fall out. A mandolin is useful to cut the cucumbers in slices that are the same thickness.
